Instructions
In a large mixing bowl, combine the rolled oats, almond butter, and honey or maple syrup. Stir until well blended.
Add the lemon zest, fresh lemon juice, poppy seeds, and salt to the mixture. If you’re using shredded coconut and chopped nuts, include them here as well.
Mix all ingredients thoroughly until you have a sticky and well-combined mixture. You may need to use your hands for easier mixing.
Chill the mixture in the refrigerator for about 20-30 minutes to firm up.
Once chilled, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls.
Place the energy balls on a lined baking sheet or plate.
Optional: You can roll the energy balls in additional poppy seeds or shredded coconut for extra texture and presentation.
Store the energy balls in an airtight container in the fridge for up to a week. Enjoy them as a quick snack or energy boost!
