In a large mixing bowl, combine the rolled oats, almond butter, honey, and vanilla extract. Stir until well combined and smooth.
Add in the ground cinnamon, ginger, cardamom, cloves, and a pinch of salt. Mix well to evenly distribute the spices.
Fold in the chopped almonds and shredded coconut until thoroughly incorporated.
Refrigerate the mixture for about 30 minutes to make it easier to handle.
Once chilled, use your hands to scoop out about a tablespoon of the mixture and roll it into bite-sized balls. Repeat until all the mixture is shaped into energy bites.
Store the energy bites in an airtight container in the refrigerator.
