Instructions
Preheat your oven to 350°F (175°C). Line a baking dish (about 9x13 inches) with parchment paper, leaving a bit of overhang for easy removal later.
Spread 2 cups of mini marshmallows onto a baking sheet in an even layer. Bake in the preheated oven for about 5-7 minutes, or until they are golden and toasted. Keep an eye on them to prevent burning.
In a large pot, melt the butter over low heat. Once melted, stir in the remaining 2 cups of mini marshmallows, salt, and vanilla extract. Continue to stir until completely melted and smooth.
Remove the pot from heat and add the toasted marshmallows to the melted mixture. Gently fold in the Rice Krispies cereal, crushed graham crackers (if using), and chocolate chips until everything is well coated and combined.
Pour the mixture into the prepared baking dish. Use a spatula or your hands (greased with butter) to press the mixture evenly into the dish. Make sure to press down firmly without squishing it too much.
Allow the treats to cool at room temperature for about 30 minutes. Once set, use the parchment paper to lift them out of the dish and cut them into squares or rectangles.
Serve immediately or store in an airtight container for up to a week.
