In a medium mixing bowl, combine the rolled oats, coconut milk, Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well to combine all the ingredients.
Gently fold in the sliced strawberries, ensuring they are evenly distributed throughout the mixture.
Divide the oat mixture into two mason jars or airtight containers. Make sure to pack it down slightly.
Sprinkle the shredded coconut evenly over the top of the oats in each jar.
Seal the containers and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and soften.
In the morning, give the oats a good stir. If you prefer a thinner consistency, add a splash more coconut milk.
To serve, top the overnight oats with extra sliced strawberries and a sprinkle of shredded coconut for added flavor and texture.
