3 cups frozen hash browns, thawed

1 cup shredded sharp cheddar cheese

4 large eggs

1 cup whole milk

1 cup asparagus, chopped into 1-inch pieces

1/2 cup cherry tomatoes, halved

1/2 cup green onions (scallions), sliced

Salt and pepper to taste

1 tablespoon olive oil

Fresh herbs (like thyme or parsley) for garnish

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the thawed hash browns with a pinch of salt and pepper. Press this mixture evenly into the bottom and up the sides of a greased 9-inch pie dish to form the crust. Bake in the preheated oven for 20 minutes, or until golden brown.

      While the crust bakes, prepare the filling. In a skillet, heat the olive oil over medium heat. Add the chopped asparagus and sauté for 3-4 minutes until vibrant and tender. Then, remove from heat and let it cool slightly.

        In another bowl, whisk together the eggs, whole milk, salt, and pepper until well combined. Stir in the sautéed asparagus, halved cherry tomatoes, sliced green onions, and shredded cheddar cheese.

          Once the hash brown crust is ready, carefully pour the egg mixture over the hot crust.

            Return the quiche to the oven and bake for an additional 25-30 minutes, or until the egg is set and lightly golden on top.

              Remove from the oven and allow the quiche to cool for about 10 minutes before slicing.
