Instructions
In a bowl, combine the shrimp with olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Mix until the shrimp are evenly coated in spices.
Heat a skillet over medium-high heat and add the shrimp. Cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove from heat.
In a separate bowl, prepare the spicy mango salsa by combining diced mango, red onion, jalapeño, cilantro, and lime juice. Mix well and set aside.
Warm the corn tortillas in a dry skillet for about 30 seconds on each side or until pliable.
Assemble the tacos by placing a few shrimp on each tortilla, topping them with generous spoonfuls of the mango salsa and a slice of avocado.
Serve the tacos with a dollop of sour cream on the side if desired.
