In a large skillet, heat the olive oil over medium-high heat.
Add the sliced sausage to the skillet and cook for about 5-7 minutes, or until browned. Remove and set aside.
In the same skillet, add the chopped onion and diced bell pepper. Sauté for 3-4 minutes until softened. Add minced garlic and cook for an additional 1 minute.
Sprinkle in the Cajun seasoning, smoked paprika, and cayenne pepper. Stir well to coat the vegetables in the spices.
Return the sausage to the skillet, then add the undrained diced tomatoes and chicken broth. Stir to combine all ingredients.
Bring the mixture to a simmer, then add the shrimp. Cook for about 5 minutes or until the shrimp are pink and cooked through.
Taste and adjust seasoning with salt and black pepper as needed.
Remove from heat and garnish with chopped green onions and parsley before serving.
