Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Pat the chickpeas dry with a clean kitchen towel or paper towels to remove excess moisture.
In a large bowl, mix the olive oil, ranch seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper together.
Add the dried chickpeas to the bowl and toss until they are evenly coated with the seasoning mixture.
Spread the seasoned chickpeas out in a single layer on the prepared baking sheet.
Roast the chickpeas in the preheated oven for 25-30 minutes, shaking the pan halfway through, until they are golden brown and crispy.
Once roasted, remove from the oven and allow to cool for a few minutes.
For added freshness, sprinkle chopped parsley on top before serving.
Notes
Serve in a rustic bowl or on a platter. Pair with a dip for extra flavor.
