4 chicken thighs, bone-in and skin-on

2 tablespoons olive oil

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, for garnish

For the Avocado Green Sauce:

1 ripe avocado

1 cup fresh cilantro leaves (stems removed)

1 jalapeño, seeded and chopped

2 cloves garlic

Juice of 1 lime

1/4 cup Greek yogurt

Salt to taste

Water, as needed for consistency

Marinate the Chicken: In a large mixing bowl, combine olive oil, cumin, paprika, garlic powder, lime juice, salt, and pepper. Add the chicken thighs, ensuring they are well coated in the marinade. Let the chicken marinate for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Green Sauce: While the chicken is marinating, prepare the avocado green sauce. In a food processor, combine the avocado, cilantro, jalapeño, garlic, lime juice, Greek yogurt, and salt. Blend until smooth. If the sauce is too thick, add water a tablespoon at a time until the desired consistency is achieved. Adjust salt as needed.

      Cook the Chicken: Preheat your grill or oven to 400°F (200°C). If using a grill, cook the chicken thighs for about 6-7 minutes on each side until fully cooked and internal temperature reaches 165°F (75°C). If baking, place the marinated chicken on a baking sheet and bake for 25-30 minutes until golden brown and cooked through.
