In a large mixing bowl, combine the natural peanut butter, honey (or maple syrup), and vanilla extract. Stir until well blended.
Add the rolled oats, ground flaxseed, chia seeds, and a pinch of salt to the bowl. Mix until all the dry ingredients are fully incorporated into the wet mixture.
Fold in the chocolate chips gently.
Using your hands (have a bit of fun here!), scoop out about a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
Place the energy bites on a parchment-lined baking sheet or plate.
Once all the bites are formed, refrigerate them for at least 30 minutes to help them firm up.
Store in an airtight container in the refrigerator for up to one week or freeze for later enjoyment.
