2 chicken breasts, sliced into strips

2 cups mixed mushrooms (shiitake, cremini, and button), sliced

1 medium onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 tablespoons soy sauce

1 tablespoon balsamic vinegar

1 cup chicken broth

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat olive oil over medium-high heat. Add sliced chicken strips, season with salt and pepper, and sauté until they begin to brown, about 5-7 minutes. Remove from the skillet and set aside.

    In the same skillet, add the sliced onions and cook for 3-4 minutes until softened. Then, add the minced garlic and sauté for an additional minute until fragrant.

      Incorporate the mixed mushrooms into the skillet, cooking for about 5-6 minutes until they release their juices and start to brown.

        Sprinkle in the thyme and stir to combine. Pour in the soy sauce and balsamic vinegar, cooking for an additional minute to let the flavors meld.

          Return the chicken to the skillet and add the chicken broth. Bring to a gentle simmer and cook for another 10 minutes, or until the chicken is fully cooked and the sauce has thickened slightly.

            Taste and adjust seasoning with salt and pepper if needed.

              Remove the skillet from heat and let it sit for a minute before serving.
