In a separate bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth.
Pour the wet ingredients into the dry mixture and stir until fully incorporated. If using, fold in the dark chocolate chips.
Once everything is combined, use your hands to form the mixture into small bite-sized balls (about 1 inch in diameter). You can slightly dampen your hands with water to prevent sticking.
Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
Once set, store the bites in an airtight container in the refrigerator for up to a week or freeze for longer storage.
