In a medium bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, rosemary, salt, pepper, and apple cider vinegar until well combined.
Place the chicken breasts in a baking dish and pour half of the honey mustard mixture over them, making sure they are well coated. Save the remaining mixture for later.
Bake the chicken in the preheated oven for 20-25 minutes or until the chicken is cooked through and has an internal temperature of 165°F (75°C).
Remove the chicken from the oven and brush the remaining honey mustard glaze over the top of each piece. Return to the oven for an additional 5 minutes to caramelize the glaze.
Once done, remove from the oven and let the chicken rest for 5 minutes before slicing.
Garnish with fresh parsley before serving.
