In a medium bowl, whisk together the honey, Dijon mustard, olive oil, apple cider vinegar, minced garlic, dried thyme, salt, and pepper until well combined. This will be your marinade.
Pat the chicken thighs dry with paper towels and place them in a baking dish.
Pour the honey mustard marinade over the chicken thighs, ensuring they are well coated. Allow them to marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor).
Once marinated, transfer the baking dish to the preheated oven. Bake for 35-45 minutes until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the skin is golden and crispy.
Occasionally baste the chicken with the marinade during cooking for added flavor and moisture.
When done, remove from the oven and let it rest for 5 minutes before serving.
Garnish with fresh chopped parsley for a pop of color and freshness.
