4 cups all-purpose flour

1 packet (2 1/4 tsp) active dry yeast

1/2 cup whole milk, warmed

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

2 large eggs

1 teaspoon salt

1 tablespoon ground cinnamon

1/2 cup brown sugar, packed

1/2 cup unsalted butter, softened (for filling)

1/2 cup powdered sugar (for icing)

2 tablespoons cream cheese, softened (for icing)

1-2 tablespoons milk (for icing)

Activate the yeast: In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the milk and let it sit for about 5-10 minutes until frothy.

    Mix the dough: In a large mixing bowl, combine the flour, salt, and melted butter. Add the activated yeast mixture and eggs. Mix until a dough forms.

      Knead the dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until it is smooth and elastic.

        First rise: Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.

          Prepare the filling: In a small bowl, mix the softened butter, brown sugar, and ground cinnamon until well combined.

            Roll out the dough: After the dough has risen, punch it down and roll it out on a floured surface into a rectangle (about 16x12 inches).

              Spread the filling: Evenly spread the cinnamon filling over the rolled-out dough, leaving a small border around the edges.

                Roll it up: Starting from one long edge, tightly roll the dough into a log. Pinch the seam closed.
