Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the halved baby potatoes, olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
Toss everything together until the potatoes are well coated with the mixture.
Spread the potatoes in a single layer on a baking sheet lined with parchment paper to ensure even cooking.
Roast in the preheated oven for about 40-45 minutes, turning them halfway through, until they are golden brown and crispy on the outside.
Once done, remove from the oven and let them cool slightly before garnishing with fresh parsley.
