black tea bags (or 4 teaspoons loose leaf black tea)

honey (or to taste)

Instructions
In a pot, bring 4 cups of water to a boil.
Once boiling, add the sliced ginger and let it steep for about 5–7 minutes to infuse the flavor.
Remove the pot from heat and add the black tea bags. Let the tea steep for another 5 minutes.
Carefully remove the tea bags and ginger slices from the pot. Stir in the honey while the mixture is still warm, allowing it to dissolve completely.
Add the sliced peaches to the warm tea and mash them slightly with the back of a spoon to release their juices.
Allow the tea to cool down to room temperature, then stir in the fresh lemon juice.
Strain the tea into a pitcher to remove the peach solids.
Refrigerate the tea until thoroughly chilled.
Serve the ginger peach iced tea over ice cubes in tall glasses, garnished with fresh mint leaves.
Notes
Adjust the sweetness with more or less honey as desired.
