Spread the seasoned sweet potato wedges in a single layer on the prepared baking sheet.
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are crispy and golden brown.
Once done, remove the fries from the oven and sprinkle the grated Parmesan cheese evenly over the hot fries.
Return them to the oven for an additional 2-3 minutes to melt the cheese.
Take them out, let them cool for a minute, and then garnish with fresh parsley before serving.
