Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, paprika, salt, pepper, and olive oil to create a fragrant herb mixture.
Pat the chicken thighs dry with a paper towel. This helps achieve a crispy skin.
Rub the herb mixture generously all over the chicken thighs, making sure to get some underneath the skin for deeper flavor.
Place the seasoned chicken thighs in a large oven-safe skillet or baking dish.
Arrange the lemon slices around the chicken thighs. This will infuse a wonderful citrus flavor during cooking.
Roast in the preheated oven for about 35-40 minutes, or until the skin is golden brown and the internal temperature reaches 165°F (75°C).
Once done, remove the chicken from the oven and let it rest for 5 minutes to retain its juices.
Garnish with fresh parsley before serving for an added pop of color and freshness.
