Ingredients

4 boneless, skinless chicken breasts

4 tablespoons olive oil

5 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

Zest of 1 lemon

1 cup orzo pasta

3 cups chicken broth

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Instructions

Marinate the Chicken: In a bowl, combine 2 tablespoons of olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and pepper. Add the chicken breasts and coat well. Let them marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor).

Cook the Chicken: Heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and let it rest.

Prepare the Orzo: In the same skillet, pour in the chicken broth and bring it to a boil. Add the orzo and reduce the heat to a simmer. Cook the orzo for about 10-12 minutes, or until al dente and the liquid has mostly absorbed.

Mix in Flavors: Once the orzo is cooked, add the halved cherry tomatoes, the lemon juice, and parsley. Stir gently until everything is combined and heated through. Season with additional salt and pepper if needed.

Plate the Dish: Slice the garlic herb chicken and serve it over a bed of lemon orzo. Drizzle any remaining juices from the pan over the top.

            Prep Time: 30 minutes | Total Time: 1 hour | Servings: 4

              - Presentation Tips: Serve the dish on a large platter garnished with extra lemon slices and a sprig of fresh parsley for a colorful, appetizing look.
