Instructions
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes, until frothy.
In a large mixing bowl, combine the flour and salt. Create a well in the center and pour in the yeast mixture. Stir with a wooden spoon until it starts to come together.
Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large pot, bring about 8 cups of water to a boil. Once boiling, stir in the baking soda carefully (it will bubble up).
Punch down the risen dough and turn it out onto a floured surface. Divide it into 8 equal portions. Roll each portion into a long rope (about 1-inch thick) and cut it into 1-inch pieces to form the pretzel bites.
Carefully drop the pretzel bites into the boiling baking soda water (in batches). Boil for 30 seconds for each batch, then use a slotted spoon to remove them and place them on the prepared baking sheet.
Brush the tops of the pretzel bites with the beaten egg and sprinkle with coarse sea salt.
Bake in the preheated oven for about 12-15 minutes, or until golden brown.
Remove from the oven and let cool slightly. If desired, brush with melted butter and sprinkle with garlic powder or Parmesan cheese for added flavor.
Notes
Serve warm in a basket lined with a cloth, accompanied by mustard or cheese dip.
