2 boneless, skinless chicken thighs

4 cups chicken broth

2 packs of instant ramen noodles (discard seasoning packet)

1 tablespoon sesame oil

1 tablespoon chili paste (adjust to taste)

2 cloves garlic, minced

1 teaspoon ginger, grated

2 green onions, chopped

1 cup baby spinach

1 cup sliced mushrooms (shiitake or button)

2 soft-boiled eggs (optional)

Salt and pepper to taste

Sesame seeds for garnish

Cook the Chicken: In a medium pot, heat the sesame oil over medium heat. Add the chicken thighs and season with salt and pepper. Sear the chicken for about 4-5 minutes on each side until golden-brown and cooked through. Remove and set aside to rest.

    Prepare the Broth: In the same pot, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring it to a simmer. Stir in the chili paste according to your heat preference.

      Add Vegetables: Once the broth is simmering, add the sliced mushrooms and spinach. Let them cook for about 5 minutes until the spinach is wilted and mushrooms are tender.

        Cook the Noodles: Add the ramen noodles to the pot and cook them in the broth according to package instructions (usually 3-4 minutes).

          Shred the Chicken: While the noodles cook, shred the rested chicken thighs using two forks.

            Assemble the Ramen: Once the noodles are done, remove the pot from heat. Divide the noodles and vegetables among bowls, ladle the spicy broth over the top, and add the shredded chicken.
