4 boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1 cup Greek yogurt

1 cucumber, finely grated

2 cloves garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

1 cup cherry tomatoes, halved

¼ cup feta cheese, crumbled (for topping)

Fresh mint leaves, for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large baking dish, layer the uncooked rice evenly at the bottom.

      Place the chicken thighs on top of the rice, ensuring they don’t overlap.

        In a separate bowl, mix the chicken broth, salt, pepper, paprika, and oregano. Pour this mixture over the chicken and rice.

          In another bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and a pinch of salt and pepper. Mix well to create the tzatziki sauce.

            Spoon half of the tzatziki sauce over the chicken thighs, reserving the other half for serving later.

              Scatter the halved cherry tomatoes around the chicken in the baking dish.

                Cover the baking dish tightly with foil and bake for 35-40 minutes, or until the chicken is cooked through and the rice is tender.

                  Remove from the oven and let it sit for 5 minutes. Fluff the rice with a fork before serving.

                    Serve the chicken and rice with the reserved tzatziki sauce drizzled on top, and sprinkle the crumbled feta cheese over the dish. Garnish with fresh mint leaves for added flavor.
