1mediumcucumber, grated and excess moisture squeezed out
2tablespoonsfresh dill, finely chopped
1tablespoonlemon juice
1smallgarlic clove, minced
1teaspoonolive oil
to tastesalt and pepper
Instructions
Start by grating the cucumber using a box grater or food processor. Once grated, place the cucumber in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the dip doesn't become watery.
In a mixing bowl, combine the drained cucumber, Greek yogurt, and fresh dill.
Add the lemon juice, minced garlic, and olive oil to the mixture.
Season with salt and pepper to taste, mixing well until all ingredients are evenly incorporated.
Cover the bowl with plastic wrap and refrigerate the dip for at least 30 minutes to allow the flavors to meld together and the dip to chill.
Notes
Serve the dip in a shallow bowl, garnished with an extra sprig of dill and accompanied by fresh vegetable sticks or pita chips.
