Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a shallow bowl, combine the panko bread crumbs, grated Parmesan cheese, garlic powder, onion powder, dried Italian herbs, salt, and black pepper. Mix well.
In another shallow bowl, whisk together the eggs and milk until well combined.
Dip each chicken breast first into the egg mixture, allowing excess to drip off, then coat thoroughly with the panko-Parmesan mixture, pressing lightly to adhere.
Place the coated chicken breasts on the prepared baking sheet. Drizzle olive oil over the top of each piece to promote even browning.
Bake in the preheated oven for 25-30 minutes or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). Optional: Broil for an additional 2-3 minutes at the end for extra crispiness.
Once done, remove from the oven and let it rest for 5 minutes.
Garnish with freshly chopped parsley before serving.
