Instructions
In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Pour in the crushed tomatoes and stir. Bring to a simmer and cook for about 5 minutes.
Reduce heat to low, then stir in the heavy cream. Mix until well combined.
Add the Italian seasoning, sugar, salt, and pepper to the sauce. Allow it to simmer for another 5 minutes to thicken slightly.
Stir in the chopped spinach and cook for 2-3 minutes until wilted.
Add the cooked penne to the sauce and mix until the pasta is well coated with the creamy mixture.
Stir in the grated Parmesan cheese and mix until melted and creamy. Adjust seasoning if needed.
Plate the Creamy Tomato Spinach Penne hot, garnished with fresh basil leaves on top.
