Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
Stir in the minced garlic, carrots, celery, thyme, and oregano. Cook for another 5 minutes, allowing the vegetables to soften.
Pour in the chicken broth and bring to a gentle boil.
Add the shredded chicken and gnocchi to the pot. Reduce the heat to a simmer and cook for 3-5 minutes, or until the gnocchi floats to the top.
Stir in the heavy cream and fresh spinach, cooking for an additional 2 minutes until the spinach wilts.
Season the soup with salt and pepper to taste.
Serve hot, garnished with grated Parmesan cheese on top.
Notes
Ladle the soup into bowls and sprinkle with extra Parmesan cheese and a few fresh spinach leaves for a pop of color.
