Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and cook for an additional minute until fragrant.
Stir in the broccoli florets and vegetable broth, bringing the mixture to a boil. Cover and simmer for 10-15 minutes or until the broccoli is tender.
Once the broccoli is cooked, use an immersion blender to purée the soup until smooth (or transfer to a blender in batches).
Return the soup to medium heat and stir in the heavy cream, Dijon mustard, and paprika. Mix well.
Gradually fold in the grated cheddar cheese, stirring until melted and the soup is creamy.
Season with salt and pepper to taste.
Serve hot, garnished with croutons if desired.
