Instructions
Rinse the jasmine rice under cold water until the water runs clear to remove excess starch. Drain well.
In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Stir to combine.
Bring the mixture to a gentle boil over medium heat.
Once boiling, reduce the heat to low, cover with a lid, and let it simmer for about 15 minutes or until the rice has absorbed all the liquid.
Once cooked, remove from heat and let it sit, covered, for another 5 minutes to steam.
Fluff the rice with a fork, then add the lime zest and juice. Gently mix to incorporate the flavors.
Serve warm, garnished with fresh cilantro and lime wedges on the side for an extra zesty pop.
Notes
Serve with grilled chicken or fish for a complete meal.
