If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
In a medium bowl, whisk together the olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, honey, salt, and pepper to create the marinade.
Add the shrimp to the bowl, tossing to coat them well in the marinade. Cover and let marinate in the refrigerator for 20-30 minutes.
Preheat the grill or grill pan over medium-high heat.
Once the shrimp is marinated, thread them onto the skewers (about 4-5 shrimp per skewer).
Grill the shrimp skewers for 2-3 minutes on each side or until the shrimp are pink and opaque. Remove them from the grill.
Arrange the skewers on a serving plate, garnish with chopped cilantro, and serve with lime wedges on the side.
