1 lb (450g) chicken thighs, boneless and skinless

3 tablespoons olive oil

2 teaspoons ground cumin

2 teaspoons ground paprika

1 teaspoon ground coriander

1 teaspoon ground turmeric

1/2 teaspoon ground cinnamon

1/2 teaspoon cayenne pepper (adjust to taste)

4 cloves garlic, minced

Juice of 1 lemon

Salt and pepper to taste

Pita bread or flatbreads, for serving

Fresh parsley, chopped, for garnish

For the Creamy Garlic Sauce:

1 cup plain Greek yogurt

4 cloves garlic, minced

Juice of 1/2 lemon

2 tablespoons tahini

Salt to taste

Instructions
 

In a large bowl, combine the olive oil, cumin, paprika, coriander, turmeric, cinnamon, cayenne pepper, minced garlic, lemon juice, salt, and pepper. Mix well to create a marinade.

    Add the chicken thighs to the marinade and toss until they are completely coated. Cover and let it marinate in the refrigerator for at least 1 hour (or overnight for best flavor).

      Preheat your grill or stovetop grill pan over medium-high heat.

        Remove the chicken from the marinade and grill for about 5-7 minutes on each side or until fully cooked and charred on the edges. The internal temperature should reach 165°F (75°C).

          While the chicken is grilling, prepare the creamy garlic sauce. In a small bowl, mix together the Greek yogurt, minced garlic, lemon juice, tahini, and salt until well combined. Adjust the salt level to your preference.

            Once the chicken is cooked, remove from the grill and let it rest for a few minutes. Then slice the chicken into thin strips.

              To serve, lay out pieces of pita bread or flatbread, add a generous amount of sliced chicken, drizzle with creamy garlic sauce, and garnish with chopped parsley.
