Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, mix together the chopped spinach, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, onion powder, red pepper flakes (if using), salt, and pepper until well combined.
Place the chicken breasts on a cutting board and butterfly each one by slicing it horizontally without cutting all the way through, creating a pocket for the filling.
Stuff each chicken breast with the cheesy spinach mixture, securing the opening with toothpicks or kitchen twine if necessary to hold the filling inside.
Season the outside of the stuffed chicken breasts with salt, pepper, and a sprinkle of olive oil.
In an oven-safe skillet, heat the remaining olive oil over medium-high heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Remove the skillet from the oven, and let the chicken rest for a few minutes before removing the toothpicks or twine.
