Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and celery, and sauté for about 3-4 minutes until they start to soften.
Add the ground turkey to the skillet, cooking until it’s browned and no longer pink, about 5-7 minutes.
Stir in the diced red bell pepper, corn, black beans, Cajun seasoning, lime juice, and a pinch of salt and pepper. Cook for an additional 5 minutes, allowing all flavors to meld.
Remove from heat and let the mixture cool slightly.
To serve, spoon the turkey mixture into individual lettuce leaves, folding them like wraps.
Garnish with fresh cilantro on top for an added flavor burst.
