Instructions
Preheat your grill or skillet over medium-high heat.
Season the chicken breasts evenly with Cajun seasoning, salt, and pepper.
Drizzle olive oil over the seasoned chicken and rub it in for even coverage.
Grill or pan-sear the chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for 5 minutes.
While the chicken is resting, in a large salad bowl, combine the chopped romaine lettuce, halved cherry tomatoes, croutons, and grated Parmesan cheese.
Slice the rested chicken into strips and add to the salad mixture.
Drizzle Caesar dressing over the salad and toss gently until all ingredients are well combined.
Serve immediately, garnished with fresh parsley if desired.
