Instructions
In a medium bowl, combine the Greek yogurt, honey (or maple syrup), lemon zest, and lemon juice. Mix well until smooth and creamy.
In serving glasses or bowls, start layering your parfait. Begin with a generous spoonful of the lemon yogurt mixture at the bottom.
Add a layer of granola on top of the yogurt, followed by a layer of fresh blackberries.
Repeat the layering process until the glasses are filled, finishing with a layer of the lemon yogurt on top.
Garnish the parfaits with extra blackberries and a sprig of fresh mint, if desired.
Serve immediately or refrigerate for up to an hour to let the flavors meld.
