Instructions
In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and sugar until well combined.
In a separate bowl, mash the ripe banana using a fork until smooth. Then mix in the milk, egg, and melted butter (or coconut oil) until fully blended.
Pour the wet ingredients into the dry ingredients and stir gently until just combined (be careful not to over-mix; it’s okay if a few lumps remain).
Fold in the semi-sweet chocolate chips gently into the batter.
Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or butter.
Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
Flip the pancakes and cook for an additional 2-3 minutes on the other side, or until golden brown.
Remove the pancakes from the skillet and keep warm while you repeat the process with the remaining batter.
Serve the pancakes warm, topped with extra banana slices and a generous drizzle of maple syrup.
