Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a medium bowl, combine the Greek yogurt, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth. This will be your marinade.
Place the chicken breasts in a large zip-lock bag or shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
Remove the chicken from the marinade, allowing any excess to drip off. Coat each chicken breast evenly with the everything bagel seasoning, pressing gently to adhere it to the surface.
Place the seasoned chicken breasts on the prepared baking sheet. Drizzle olive oil over the top to help with browning and add flavor.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the coating is crispy.
Once cooked, let the chicken rest for 5 minutes before slicing.
Garnish with freshly chopped chives or parsley before serving.
