Instructions
In a large mixing bowl, combine rolled oats, almond butter, chopped dried apples, honey, cinnamon, vanilla extract, and ground flaxseed (if using).
Mix all ingredients until well combined. If the mixture seems too dry, add a splash of water or more almond butter until it reaches a sticky consistency.
Fold in mini chocolate chips or chopped nuts, if desired for added flavor and texture.
Once mixed, use your hands to scoop out approximately 1 tablespoon of the mixture and roll it into a ball. Repeat until all of the mixture is used up.
Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to help them firm up.
Once they are set, transfer to an airtight container for storage. They can be stored in the fridge for up to a week or frozen for longer freshness.

Serve these delightful energy bites in a mason jar or on a decorative plate. You can sprinkle additional cinnamon on top or garnish with fresh apple slices for an appealing touch.
