In a large mixing bowl, combine the rolled oats, almond butter, and honey or maple syrup. Stir until well blended.
Add the shredded coconut, dark chocolate chips, chopped almonds, vanilla extract, and sea salt to the mixture. Mix thoroughly until all ingredients are evenly distributed.
Use your hands to form small balls, about 1 inch in diameter, from the mixture. If it’s too sticky, dampen your hands slightly with water to ease the process.
Place the energy bites on a parchment-lined baking sheet or plate.
Once all bites are formed, refrigerate for at least 30 minutes to firm them up.
After they have chilled, store any leftovers in an airtight container in the refrigerator for up to a week.
