Instructions
In a large mixing bowl, combine the almond flour, rolled oats, shredded coconut, and salt.
Add the almond butter, honey (or maple syrup), and vanilla extract to the dry ingredients.
Mix everything together until it forms a sticky dough. If the mixture is too dry, add a little water or more almond butter as needed.
Fold in the dark chocolate chips (or cacao nibs) and chopped almonds, ensuring they are evenly distributed throughout the mixture.
Using your hands, scoop and roll the mixture into small bite-sized balls, about 1 inch in diameter.
Place the formed energy balls onto a baking sheet lined with parchment paper.
Once all the mixture is rolled out, refrigerate the energy balls for at least 30 minutes to firm up.
After refrigerating, transfer the energy balls to an airtight container and store them in the fridge for up to a week.
Notes
Arrange the energy balls in a small bowl and sprinkle some shredded coconut and chopped almonds around them for an attractive display.
